Cranachan Recipe
Cranachan is a traditional Scottish dessert. It’s easy to make and is so delicious!
Sometimes, we serve cranachan at the Roots Burns Night. Burns Night is a Scottish holiday
that celebrates the Scottish poet Robert Burns where the menu is all kinds of very Scottish
food and the participants recite some of Burns’ poetry.
We hope you love trying out this time-honoured dessert!

Ingredients:
75 g oats (3/4 cup)
2 Tbsp honey
2 Tbsp whisky (optional)
250 g raspberries (2 cups)
350 ml double cream (heavy whipping cream) (1.5 cups)
Measurements don’t need to be exact. Feel free to add more or less to taste.

Method:

  1. Toast the oats on the stovetop or in the oven. Toast until you get a nutty smell, but
    not burnt. Allow to cool.
  2. Take about 2/3 of the raspberries and mash them with a fork. Save the other 1/3 of
the raspberries whole as a topping.
  3. Whip the cream until it has stiff peaks.
  4. Gently fold the honey and the whisky (the whisky is optional) into the whipped
    cream.
  5. Gently fold almost all the cooled oats into the whipped cream mixture. Save a bit of
the oats to use as a topping.

To assemble and serve:
If possible, you’ll want to use a clear glass bowl/individual serving dishes. This dessert will
be layered, and it’s lovely to be able to see the layers!

  1. Starting with the whipped cream mixture on the bottom, layer the cream, then
mashed raspberries, then more cream, and so on 2 or 3 times.
  2. The top layer should be the whipped cream mixture.
  3. As a garnish, add the whole raspberries, the rest of the oats, and a drizzle of honey
    to the top.
  4. Eat immediately or save till the next day!

Variations:

  1. You can always use other berries instead if you want to.
  2. While adding whisky to this recipe is traditional, it’s definitely not necessary. You
can just leave the whisky out completely, or you can add vanilla flavouring instead.
